Pumpkin Spice Pancakes
2 1/4 cups whole wheat flour (can use all or part white)
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 - 1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/2 cup melted butter or oil
3 eggs, beaten
1/4 cup honey or maple syrup
2 Tablespoons brown sugar (if desired)
1 cup puréed pumpkin
1 cup milk, water, or apple cider or juice, plus additional juice or water for desired batter thickness
Toppings: Fresh whipped cream, fresh ground nutmeg, apple butter, maple syrup, etc.
Method: Mix dry ingredients together, then add wet ingredients and stir just until well mixed. Batter will be thick. Add a little extra milk, juice, or water if needed.
Fry on a hot griddle. Add chocolate chips to individual pancake for the ones who like those.
Serve with desired toppings.
