Served here with homemade coffee custard.
1 cup (2 sticks) butter
1/2 cup sugar
2 1/4 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla OR 1/2 teaspoon vanilla and 1/2 teaspoon almond extract
Method: Cream butter and sugar. Add egg and mix. Add dry ingredients. Drop by cookie scoop or teaspoonful into a bowl of granulated sugar to coat. Place on increased cookie tray and press lightly with fork. Bake at 350 degrees for 8-10 minutes.
Note: Besides just being excellent cookies, they can be served alongside just about anything to round out a dessert. When I cooked at Deer Valley Ranch in Colorado, we served these with strawberry ice cream for a summer lunch dessert. They also freeze well.
