This is a combination of some my favorite recipes for pizza. Be sure to read through all the ingredients before starting the process.
Ingredients for crust:
2 1/2 cups flour
1 Tablespoon yeast
1 cup warm water
1 teaspoon salt
1 teaspoon sugar
1 Tablespoon vegetable (or olive/grape seed) oil
Method for crust: Combine all ingredients in a bowl and knead for a few minutes. Let rest will preparing other ingredients. (This crust does not need any amount of rising time.)
Ingredients for pizza:
1 recipe dough (above)
Extra Virgin Olive oil
4 ounces mozzarella cheese (fresh is best, but use what you have on hand)
2 Tablespoons freshly grated Parmesan
1 fresh sliced tomato (optional)
8 basil leaves torn into small pieces OR 1/4 cup basil purée, see recipe below
Method for pizza: Preheat oven to 425 degrees. Roll or stretch dough into greased pizza pan. Brush a little olive oil over the dough. Sprinkle mozzarella cheese over crust brushed with oil. If adding the fresh tomato slices, place them on top of the mozzarella. Bake for about 10 minutes. Remove from oven and add the Parmesan. Return to oven for another 2-4 minutes. Scatter torn basil leaves on top or drizzle with basil purée to serve.
Ingredients for Basil Purée:
3 garlic cloves
1/2 cup extra virgin olive oil
2 cups basil leaves
1/2 teaspoon salt
Method for Basil Purée: Pulverize the garlic cloves and oil in a blender or smoothie machine. Add basil and salt. Purée until smooth. Mixture should be thin enough to easily spread over dough or drizzle over a dish.
I intentionally drizzled more basil purée on one side because I like it with plenty and the children like it with just a touch.
