1 1/2 cups peanut butter
1/2 honey or maple syrup
1/4 cup olive oil (or unsweetened applesauce)
1/2 teaspoon salt
1 1/2 cup quick or rolled oats (gluten free for those who need that)
1 cup chocolate chips if desired.
Method: blend oats in blender, smoothie maker, or food processor until flour. Stir together all ingredients, adding flour last. Drop onto oiled cookie sheet (I use parchment paper) and press slightly with finger tips. Bake at 350 degrees for 8-12 minutes, or until golden brown. Cool slightly on tray before removing to wire rack.
