Easy Chicken Pot Pie Casserole

Ingredients:

 

Filling:

3 cups cooked chicken, shredded or cubed

1 cup carrots, diced small

1 cup peas

1 cup potatoes, diced small (yellow waxy kind works best) 

3 cups chicken broth or water

1 cup milk

2/3 cup flour

1 teaspoon salt

 

Additional Seasonings, optional, but definitely adds flavor

1/2-1 teaspoon celery salt

1/2-1 teaspoon poultry seasoning

 

Crust:

1&1/2 cups whole wheat flour (or white)

1/4 teaspoon salt

6 Tablespoons butter, melted

1&1/2 cups milk

1 Tablespoon baking powder 

 

Method:

Cook vegetables in chicken broth until tender. Add meat and stir well. Dissolve flour in milk and add to chicken and vegetable mixture. Stir constantly until thickened. Pour into 9X13 baking  dish. 

 

Mix crust ingredients together, pour over top of filling, and smooth gently with spatula. 

 

Bake at 400 degrees for 30 minutes.
