1 Tablespoon vegetable or olive oil
1 medium-to-large onion, chopped
3 garlic cloves, minced
3 cups water
1 cup dried red lentils
3/4 teaspoon turmeric
3/4 teaspoon cumin
1/2 teaspoon ground ginger
Serve over cooked basmati or jasmine rice and top with your choices of sour cream or plain yogurt, diced fresh tomatoes, chopped fresh cilantro, and naan bread.
Method: Saute onion in oil. Add minced garlic. Do not burn the garlic. Add water and lentils and cook until lentils are soft. (About 20 minutes.) Add spices and cook a few minutes longer.
We nearly ate all of this before I could snap a photo! Delicious as leftovers, too!
