Cheesy Ham and Potato Soup




1 ham steak, diced small*

6-8 medium potatoes, diced

1 medium onion, chopped small

1/4 cup butter

3 Tablespoon flour

2 cups grated cheddar cheese

6-8 cups milk

2 teaspoons smoked paprika, or to taste

salt and pepper to taste




Dice and chop ingredients. Cook potatoes in water until soft. Drain water off. Return to pot.


In a separate medium saucepan or large skillet, melt butter. Saute onion until soft, but do not brown or burn. Add flour to the butter and onion mixture and stir. Add at least 4 cups milk and grated cheese. Stir often until cheese is melted. Add the cheese sauce and ham to the potatoes. Combine and heat through, adding more milk until desired thickness. Add seasonings to taste. 


*You can purchase prepackaged ham steaks in the meat section of any grocery store or request a thick slab from the deli.
